Black Bean Corn Salsa

I never really post food items or recipes but y'all, this stuff is AMAZING! My mom has always made it for parties and get togethers, I decided to make it for two events this month and people loved it! 

Black Bean Corn Salsa
-2 15oz. cans of white corn
-3 med tomatoes, peeled, seeded and finely chopped or 2 cans of diced tomatoes
-3 to 4 fresh jalapeƱo peppers, seeded and chopped 
-2 15oz. cans od black beans rinsed and drained
-1 cup chopped fresh cilantro
-1/3 cup of lime juice
-1/4 teaspoon of salt
-1/4 teaspoon of pepper
-2 avocados, peeled and finely chopped
-Balsamic vinegar to taste
-3/4 cup of water


Add all ingredients together except avocados, don't peel and chop the avocados till you are about to serve the salsa!


With all the ingredients mixed together, except the avocados, chill the salsa for 2-3 hours!
Once chilled and ready to serve add the avocados on top and finish with a squeeze of fresh lime juice!



Serve with your favorite chips and enjoy! I promise you won't be able to stop eating!

  4. This kind of reminds me of the pico de gallo they serve at Cabo Fish Taco, minus the yummy avocado on top. I am also a Charlotte-area blogger and just stumbled across your blog. Loving it so far! :)
